Let’s admit, there’s something about the winter season that increases our craving for all things decadent, by leaps and bounds. If you notice, you will find people indulging in pakodas, samosas, ghee-laden mithais etc more than usual. Besides, winter also brings along some special dishes that add to the vibe of the season – gajar ka halwa, stuffed parathas, gur wali kheer to name a few. Then there is kadak masala chai. Chai, brewed with loads of ginger, clove, cinnamon etc, gives us a much-needed boost of energy. And to pair with it, we look for crunchy delights. Considering this, we found a classic snack recipe that can be a perfect dish to pair with your masala tea during the winter. It’s a very popular aloo bonda.

Aloo bonda is basically aloo ka pakoda, made with mashed, spiced aloo, dipped in besan batter and then, fried to perfection. It is enjoyed as is and also paired with pav to put together the quintessential vada pav. Although aloo bonda is a South Indian snack, you can find the same (almost the same) recipe prepared in Maharashtra and that is called batata vada. So, without further ado, let’s look into the recipe.

Winter Special Recipe: How To Make Aloo Bonda:

For the aloo filling, we need boiled aloo, ajwain, curry leaves, rock salt, chillies, coriander leaves, lemon juice, and of course, some oil. For the batter, we have used singhare ka atta and rock salt. You can simply replace it with besan and common salt.

Now, to start with add ajwain and curry leaves in oil and saute. Add potatoes to it, with salt, chillies, coriander leaves and lemon juice and mix everything together. Cool down the mix and make small balls out of the mix. Keep aside. For the batter, mix atta (or besan) and salt. Add some water and mix into a semi-thick consistency. Dip potato balls into the batter and drop them into the hot oil. Fry till the bondas turn crispy, light brown in colour. Serve it hot with green chutney by the side.
